Baek (white) kimchi is a slightly effervescent non-spicy napa cabbage kimchi that's filled with funk without the heat. This kimchi is sweet and crunchy from the cabbage and is fermented with plenty of zingy aromatics that give it a briny boost. It's tart, salty, pleasantly refreshing, and gentle on the gut. Use the brining juice in cold noodle dishes, to jazz up dressings, or drink it straight.
